With so many of us getting the dreaded flu this time of the year, there’s one thing we all crave. The classic hot chicken soup.
This is a great recipe for a classic “feel better” meal and is approved for all Phases of the HCG Diet.
• 250 mls Cambells Real Chicken Stock
• 100 mls of water
• 2 tbsp milk (Green Top)
• 100 grams boneless, skinless chicken breast
• 1 large celery stalk
• ¼ Onion, finely chopped
• ¼ Cup chopped leaks
• 2 tsp garlic, minced
• ½ tsp fresh or dried parsley
• ½ tsp dried basil
• ¼ tsp pepper (or to taste)
• ¼ tsp salt (or to taste)
1. Place the Campbell’s chicken broth and water in a medium-sized pot on the stove and bring to boil.
2. Trim any visible fat off the chicken breast and dice.
3. Place the chicken in the pot and cover with a lid. Boil chicken for 15 mins
4. Remove chicken from pot and set aside.
5. Add garlic, onion, milk and herbs into the broth and cook over low heat for 10mins.
6. Chop the celery stalks and leaks into bite-sized pieces (about 1cm pieces).
7. Add the celery, leaks and chicken pieces to the broth
8. Cover and heat over low for about 15-20 minutes stirring occasionally.
9. Remove from heat, transfer to a serving dish, and top with more salt and pepper, if desired. Enjoy!
This is the perfect dish to make multiple servings at once.
